This is from The River Cottage Baby and Toddler Cookbook and it’s pure genius. It’s so simple I’m not sure you can really call it a recipe.
Cheese and Apple on Toast

- Spread the cheese & apple mix over the bread, on the untoasted side.

- Give to baby. Sit back and relax.
Clementine really loves it, usually choosing to eat all the cheese and apple mix first before tackling the toast. It tastes pretty good for grown ups too, especially with a bit of pickle.
Cheese and apple on toast – the ratings
From nothing to table –5 mins – 5/5
Ease of preparing/cooking – 4/5 (you do have to peel the apple, and I’m rubbish at peeling fruit & veg)
Clementine approval – 5/5
Clean up time – 2 minutes – 4/5
Total score – 18/20 – Speedy and delicious. Plus one of your 5 a day.
Poor Clemmie also had to suffer a super quick dinner (what can I say? I’m poorly
) which was easy to cook but slightly less successful than lunch. She had steamed veg, pasta with pesto and half a salmon fillet – it was going to be plain pasta but she clocked Daddy’s pesto covered version and decided she’d much prefer that. She also studiously avoided the salmon ’til the very end of the meal, before picking it up and deciding that, actually, it was quite nice. Still, for something which took a whole 8 minutes to get to the table, it wasn’t too bad.

The pasta was appreciated by both Clemmie and I! plus the salmon is certified horse free (mostly)!
